Job Title: F&B Manager – Shopping Centre
Department: Operation
Reporting to: Senior Operation Manager




  • Managing, operating, maintaining and marketing the Food Court to the highest of professional standards.
  • Develop the Business Plan and Operating Budget of the Food Court.
  • Establish Food Court operational policies and procedures pertaining to work manuals, food service and hygiene standards, costs, consumptions, qualities, and others.
  • Coordinate with different Functional Heads such as Operations, Marketing and Leasing and other support groups in order to enhance the contribution of the Food Court Operations to the mall
  • Ensuring delivery of Business Plan. Operating Budget and Marketing Plan of the Food Court.
  • Set up the Food Court Operational Maintenance Program and the Operational Schedules.
  • Ensure all operations undertaken in the Food Court conform with both all relevant regulations and any other relevant legislative requirement applicable to those tasks.
  • Ensures that all of the various operational systems and equipment are correctly maintained to the various manufacturers’ and suppliers’ specifications
  • Liaise with Operational Contractors, ensuring the delivery of the highest standard of service within agreed timeframes and budgetary limits
  • Organize the training of contractor staff and tenant staff to deliver superior service in order to meet or exceed customer expectation.
  • Oversee supervision of contractor staff and direct them to accomplish all operational functions to agreed standards.
  • Ensures the maintenance of all records pertaining to the operations function.
  • Responsible for ordering, coding and tracking of departmental expenditure, ensuring proper delivery, receipt and secure storage of all ordered items.
  • Liaise with tenants re operational matters
  • Investigate complaints by colleagues, tenants and/or shoppers and ensure that quality standards and service are maintained at all times.
  • Ensures the implementation of all risk management guidelines for fire and safety regarding operations, including the proper storage of chemicals, paints…
  • Assist in the development, implementation & direction of all Emergency and Safety Programs
  • Be security conscious at all times
  • Advise the General Manager and Landlord on all matters relating to potential improvements to the Food Court.
  • Perform special projects and other responsibilities as assigned.
  • Perform any other duties assigned by the General Manager, the Client or Savills Vietnam.


  • Customer-Service: Senior F&B have to interact with tenants and customers, when necessary. Being friendly and courteous will help in maintaining a good relationship with the tenants and keep customers coming back.
  • Attention to Detail: Senior F&B have to keep their eyes on a lot of elements: food standards, costs, safety, etc.
  • Leadership: Senior F&B must be leaders in the back of house, rallying their team during heavy shifts, resolving conflicts and getting the job done.
  • Management Skills: Senior F&B not only deal with food, they also have to deal with costs, pricing, creating work schedules and more.
  • Organizational Skills: Keeping work schedules, shipments, cleaning schedules and more organized is crucial to the job.
  • Problem-Solving Skills: Dealing with employee conflict, irate customers and wrong stock orders is part of the job. Being able to come up with a solution quickly is a needed skill.
  • Communication Skills: Senior F&B need to accurately and easily communicate hygiene and safety standards to staff and tenant’s staff, give orders and speak with customers clearly.
  • Stamina : Senior F&B can expect long days, much of it on their feet
  • Proficiency on software programs including but not limited to Microsoft Word, Excel and PowerPoint
  • Wide-ranging exposure to contract management.
  • Fluency in English, both oral and written essential.
  • Sound knowledge in Hygiene and Food Safety
  • Ability to recognize problems or safety hazards and act upon same immediately, troubleshooting and implementing advanced problem-solving skills.
  • Education – Degree holder for Hotel and Restaurant Management
  • Work Experience – at least five (5) experience in a managerial capacity in the fields of Hospitality F& B, Service or in the food industry
